As a kid growing up, my dad would occasionally go on a bread making spree. He wasn't the most organized of persons, my mom always saying it looked like a bomb had gone off whenever he indulged his creative side. I don't recall any of the ingredients he used but I still remember the one-of-a-kind smell of bread baking in the oven.
I also distinctly remember my dad's dire warnings about the dangers of eating warm bread right out of the oven. It wasn't until many years later that I realized he was simply trying to guarantee that his tasty loaves wouldn't be devoured by his five children before they had a chance to cool. Clever man!
Of late, I've been on a break baking spree of my own with a very simple recipe courtesy one of my son- in- laws. All you need is three cups of flour, half a teaspoon of yeast, a teaspoon and a half of salt and some water. That's it.

The good news is there is no kneading required and the final product is really quite delicious. The bad news is I tried to make a glutton free loaf for Terry and it turned out as heavy as a door stop.
Although the recipe is sugar free, please explain to me why I'm suddenly gaining weight. Just maybe my dad was right about eating warm bread after all.
But then again, I really don't mind the fact that my new roll model has become the Pillsbury Doughboy. He seems like such a happy soul.
